Herbal teas to try this winter

Warming kitchen-cupboard brews for cold evenings: ginger, tulsi, cinnamon, ajwain and more, with how to make each one.

Winter evenings are a good time for a warm cup of something without tea leaves. These brews use what most Indian kitchens already have. They are simple comforting drinks; if you have a medical condition or are pregnant, check with your doctor about herbs you do not normally use.

Ginger and jaggery

Simmer a few slices of fresh ginger in two cups of water for eight to ten minutes. Turn off the heat, stir in a spoon of jaggery powder and strain.

Tulsi and black pepper

Add a handful of washed tulsi leaves and two crushed peppercorns to boiling water. Cover and let it stand for five minutes, then strain.

Cinnamon and clove

A small stick of cinnamon and two cloves simmered for ten minutes make a fragrant, gently sweet brew. Add honey once it is warm, not boiling.

Ajwain water

Boil half a teaspoon of ajwain in a cup and a half of water until it reduces slightly. Strain and sip warm.

A note on sweetening

Add honey only after the drink has cooled to warm. Jaggery can go in straight after you turn off the heat.
